Ingredients9
- 4 large egg yolks
- 1/2 cup granulated sugar, divided
- 3/4 cup heavy cream
- 1 cup mascarpone
- 1 3/4 cup espresso
- 2 tablespoons coffee liqueur
- 2 tablespoons unsweetened cocoa powder
- 24 ladyfingers
- 1 tablespoon marsala cooking wine
Method9
- In a mixing bowl, mix together half of the sugar with all of the egg yolks. Beat together until the substance turns a pale yellow. Set aside once completed.
- In another container, mix together the heavy cream, marsala cooking wine, and remaining sugar until it forms medium peaks.
- Fold mascarpone into mixture from Step 2 until fully combined.
- Fold in egg mixture from Step 1 into Step 3 mixture until fully combined. Set aside for later use.
- In an 8x8 square pan, dust the bottom of the container with cocoa powder.
- Prepare the coffee liqueur and coffee mixture in a shallow bowl. Quickly dunk the ladyfingers into the bowl, ensuring not to oversaturate the cookie (6 or 7 fast flips).
- Line the bottom of the pan with the soaked ladyfingers.
- Layer the top of the first row of ladyfingers with cream. Dust with cocoa powder if desired and repeat.
- Dust the top of the final cream layer with cocoa powder, cover the pan, and refrigerate for at least 45 minutes.
